This paper deals with the experience of research in sonorous ethnography that have been developed in the Banco de Imagens e Efeitos Visuais PPGAS/UFRGS (Bank of Images and Visual Effect PPGAS/UFRGS), as well as the treatment procedures of the sonorous image through ethnographic collections adopted by its researchers. For in such a way, this paper will have as reference the research developed in street markets and fair-free about the symbolisms of the circulation of the food represented in the circulation of the word, it forms as the sociability and the memory of daily practices of purchase and sell of foods adopts to be perpetuated in the time. It is treated therefore, of the adhesion the perspective of the collective memory to think the urban way and the images that constitute it.
